Ingredients:
Four ripe plantains
Butter or ghee and olive oil
Sea salt to taste
Method:
Peel and slice plantains into roughly 1 inch slices
Heat a cast iron pan and add enough butter or ghee and olive oil to coat the pan
When the butter/ghee and oil is hot add the plantain slices
Flip, lightly browning each side
Remove from the pan and place on a paper towel
Cover slices with paper towels
Using a rubber mallet, or your most conveniently located heavy implement, smash the slices
Add the smashed slices back to the pan, cooking until crispy and golden brown
Remove from the pan and sprinkle with sea salt
Enjoy immediately, with or without dips.
